Start with the samosa, crispy turnovers stuffed with seasoned potatoes and green peas, or the Lasooni Gobi, cauliflower spears spiced with chili flakes and garlic tomato chutney and coated in crispy florets.

For the main course, try Hydrabadi Murg Korma – roasted chicken drowned in a saffron and cashew sauce; or the Kerala Shrimp Curry, cooked in coconut milk, curry leaf and mustard seed, and finished with smoked kudampuli. Pair dishes with the garlic, rosemary or plain Naan – white flour bread baked in a clay oven.

For dessert – possibly the most delectable moment of the meal – try the coconut Kheer rice pudding sprinkled with crushed pistachio.
